Cocoa Oatmeal Muffins


  • 1 14 cups whole wheat flour
  • 1 cup sugar
  • 34 cup oats
  • 13 cup cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup low-fat milk
  • 12 cup margarine, melted
  • 1 teaspoon vanilla
  • 1 cup nuts, chopped optional
  • 12 cup semi-sweet chocolate chips, optional


Preheat oven to 400°F.  In large bowl, stir together flour, sugar, oats, cocoa, baking powder and salt.  In small bowl,  beat eggs, milk, melted butter and vanilla.  Add milk mixture and nuts if desired to dry ingredients, stirring until just moistened.  Spoon batter into 12 greased muffin cups.  Bake 15 to 20 minutes, or until the tops bounce back after pressing. Serve warm with butter.

HOST Tips:

1.  If you choose to add nuts be sure to add a bit more milk to achieve desired consistency.

2.  Add a few chocolate chips to the top of each muffin before baking for a double chocolate finish.
